Bunmei knives are the favourite of many Japanese cooks. Made by Yoshikin, the manufacturer of Global knives, these Bunmei knives use the latest production methods and high-tech molybdenum/vanadium stainless steel in their construction.
Considered to be between Chef’s knife and a paring knife, the Utility knife or ‘the Petty’ is an all-rounder when it comes to the knives within a kitchen at Chef’s disposal. A convenient tool that can cater to cutting that Chef’s knife would be too big for or when handling cutting jobs too large for a paring knife.
Distinguished from the traditional Japanese-style single-sided Bunmei range, this knife showcases a double bevel design that makes it perfectly suited for Western cooking techniques. It is expertly crafted with a bamboo handle that provides exceptional slip resistance, ensuring a secure grip during use. Unlike a double bevel knife that pushes the food away from both sides while slicing, a single bevel knife pushes the food away from just one side. This type of knife is ideal for cutting delicate fish, seafood, meat, and vegetables, thanks to its finely sharpened edge achieved at an angle of 15 degrees.
