The Zuiun knives feature blades adorned with a captivating “hamon” pattern reminiscent of classic Japanese swords, reflecting our dedication to preserving the heritage of blade-making. Crafted from Damascus steel, with a core of powdered stainless steel SPG2, these blades are meticulously honed by skilled artisans, resulting in a cloud-like surface pattern and a distinctive V-shaped “hamaguri-ba” clam blade.
In honour of our centenary, the “Zuiun” series is meticulously crafted from R2/SG2 high-speed powdered core steel, heat-treated, and cold-treated to achieve an impressive hardness rating of 62-63 HRC, ensuring superior edge retention. This represents the pinnacle of Kanetsugu’s craftsmanship, with a stunning Damascus cladding that exhibits a near-mirror finish.
The knife’s elegant tapering design enhances its edge geometry, while the robust SG2 steel allows for remarkable thinness behind the edge, delivering exceptional cutting performance. Complementing its excellence, the knife boasts a unique Shichikaku (Heptagon) handle made of rich brown pakkawood, adorned with a captivating mosaic pin for added decorative flair.
